Here are some that I really enjoy:
*Cocktail Meatballs
1 pound lean ground turkey
1 egg
2 tablespoons water
1/2 cup bread crumbs
3 tablespoons minced onion
Sauce
1 (8 ounce) can jellied cranberry sauce
3/4 cup chili sauce
1 tablespoon brown sugar
1 1/2 teaspoons lemon juice
Directions
1. Preheat oven to 350 degrees.
2. In a large bowl, mix together the turkey, egg, water, bread crumbs, and minced onion. Roll into small meatballs.
3. Bake in preheated oven for 20 to 25 minutes, turning once.
4. In a slow cooker or large saucepan over low heat, blend the cranberry sauce, chili sauce, brown sugar, and lemon juice. Add meatballs, and simmer for 1 hour before serving.
*Double Duty Bruschetta (this is always loved by a crowd)
6 roma tomatoes, chopped
1/2 cup sun-dried tomatoes, packed in oil
3 cloves minced garlic
1/4 cup olive oil
2 tablespoons balsamic vinegar
1/4 cup fresh basil, chopped
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 French baguette
2 cups shredded mozzarella cheese
Directions
1. Preheat the oven on broiler setting.
2. In a large bowl, combine the roma tomatoes, sun-dried tomatoes, garlic, olive oil, vinegar, basil, salt, and pepper. Allow the mixture to sit for 10 minutes.
3. Cut the baguette into 3/4-inch slices. On a baking sheet, arrange the baguette slices in a single layer. Broil for 1 to 2 minutes, until slightly brown.
4. Divide the tomato mixture evenly over the baguette slices. Top the slices with mozzarella cheese.
5. Broil about 5 minutes, until cheese melts.
*Artichoke Dip (I serve this with tortilla chips, pumpernickel bread chunks, bagel chips, carrots and celery)
1/4 cup mayonnaise
1/2 cup grated Parmesan/Romano cheese 1 clove garlic, peeled and minced
1/2 teaspoon dried basil
1/4 teaspoon garlic salt
salt and pepper to taste
1 (14 ounce) can artichoke hearts, drained and chopped
1/2 cup frozen chopped spinach, thawed and drained
1/4 cup shredded mozzarella cheese
Directions
1. Preheat oven to 350 degrees. Lightly grease a small baking dish.
2. In a medium bowl, mix together cream cheese, mayonnaise, Parmesan/Romano cheese, garlic, basil, garlic salt, salt and pepper. Stir in artichoke hearts and spinach.
3. Pour into greased baking dish. Top with mozzarella cheese. Bake in the preheated oven 25 minutes, until bubbly and lightly browned.
Mexican Relish (Serve with tortilla chips)
1 can black beans, drained
1 can corn, drained
1 can black olives, sliced
1 green pepper, chopped
1 small onion, chopped
salsa (choose a brand you enjoy and add until the mix is covered with sauce)
Directions
1. Mix all ingredients in a bowl. Chill until ready to serve.
